Huaiyang Cuisine

  Huaiyang cai is the famous cuisine of the Middle and Lower reaches of the Yangtze River, which nowadays includes Jiangsu, Zhejiang, Anhui, and parts of Jiangxi and Henan Provinces plus Shanghai. Huaiyang cai centers on Yangzhou and Huai' an after Zhe (Zhejiang Province) cai and Hui (Anhui Province) cai became two among the Eight Cuisines of China. Huaiyang cai can be called the noble dishes in Chinese cuisines, taking center stage in several international banquets, from which we may know the status and characteristics of Huaiyang dishes within Chinese cuisines. Huaiyang cais' emphasis is geared more to the original taste of its ingredients and sauces, which meet the healthy dining fashion of organic dishes.

The intriguing aspect is that the eaters do not have the right to order specific dishes: tThe host will arrange the menu according to different prices the eater ordered.
