  Shanxi people are committed to their simple crops. No other Chinese cuisine pays as much attention to staple food as Shanxi Cuisine. Shanxi people excel at making noodles. It is said that there are hundreds of different noodles in Shanxi and each of them with a unique flavor. Apart from that, vinegar plays an important part in Shanxi Cuisine. It offers tartness, yet with dense sweet-smelling flavor.

  It is a time-honored brand restaurant serving Shanxi Cuisine in Beijing. The restaurant offers the eaters traditional genuine Shanxi Cuisine and the price is a little high.

All the private dining rooms are named after a story or character in Chinese classical masterpieces, such as Guangong Ting and Xixiang Ji. The large red lanterns, which are the symbol of Shanxi Province, are hung in line on each floor. There are cultural performances in the big hall every night, including Shanxi Folk Song, Magic and even Pulling Noodles. The first floor of the restaurant serves Shanxi cai while the second floor offers Guangdong cai.

  Recommended Dishes: Crisp Bone Fish, Roast Suckling Pig, Yi Gen Mian - a kind of noodle as long as 15 meters (16.4 yards) and taste rather elastic.
